Apparently it was the National Knife Day on August 24, just two days ago. I'm not sure who comes up with this sort of stuff, but I won't think too hard about it, since I like knives. Why don't we have a show/tell about your favorite knives?

My favorite knife is a Japanese santoku kitchen knife. (Sorry, no picture handy, so I can do only the tell part.) It's plain and it isn't some expensive designer knife. But don't let that deceive you. It holds an edge really well, even after decades of use. I find it a true pleasure to cook with this knife. It's small and light, and so sharp that cutting up veggies is effortless. The knife almost feels like an extension of your hand. Sometimes I cook just to use that knife more!
