Assorted Fruit Leathers
Apples, apricots, berries (all kinds), cherries, nectarines, peaches, pears, pineapple and plums make excellent fruit leathers. Bananas are wonderful blended with other fruits for a smooth, naturally sweet fruit leather.
Supplies You Will Need:
Blender or food processor fitted with a metal blade
Dehydrator
Plastic wrap
Ball® Glass Preserving Jars with lids and bands, for storing
Ingredients You Will Need:
Your favorite fresh, canned or thawed frozen fruit
Fruit juice or water, optional
1 Tbsp honey, optional
Spices or flavorings, optional
Step 1, Getting Started:
Read all instructions before starting. Wash fruit and be sure to remove excess seeds from berries. Cut away blemished areas; peel, and if necessary; remove pits.
Step 2, Preparing Fruit Leather:
1.) PUREE fruit in a blender until smooth. If too thick, thin with a little fruit juice or water .
2.) ADD 1 tablespoon honey if fruit is too tart, if desired. Spices or flavorings may be added at this time. Fruits that brown after being cut (apples, nectarines, peaches, and pears) should be heated to 190°F and allowed to cool before proceeding.
3.) COVER drying trays with a heavy, food-grade plastic wrap or use specifically designed sheets that come with most dehydrators.
4.) SPREAD puree evenly, about 1/8 inch thick in the center to 1/4 inch thick at all edges on dehydrator trays. Fruit Leather
5.) DRY at 135°F until fruit puree feels pliable and leather-like. Check center to be sure there are no sticky spots.
6.) ROLL, jelly-roll style while still warm; cut into pieces and seal securely in plastic wrap. Store fruit leather in home canning jars for long-term storage.
