In Dallas I use, for specialty gear:

REI - two stores: Dallas (LBJ Freeway between Inwood and Midway) and Plano (Park and Preston). I usually check the sales, most of their prices are a little high, even considering the member discount.

Sportsman's Warehouse - Lewisville (I-35 and Hebron Parkway). Similar goods to Bass Pro Shops and Cabela's but lower prices. They don't have giant fish tanks to maintain.

Websites:

www.basegear.com - I recently bought a Leatherman Charge Ti for 74.99 with free shipping. I found their sales prices to be great, most with free shipping offers, and service to be quick.

For food and basic first aid items:

SuperTarget and WalMart Superstore. Good prices and many locations.

TAD Gear - for lights, bags, and other cools things
Steep And Cheap - discount sporting goods
Sierra Trading Post - my wife gets our outdoor clothing here on sale
Backpacking Light - cookware and other useful gear
REI - general outdoor gear

I've shopped lots of other places, but these are the guys I mostly buy from.

Here are my contributions:
http://www.filson.com - C.C. Filson - IMO the world's best made outdoor clothing. Lasts several lifetimes - some still American-made. I often buy at Getz's - seems cheaper most days http://www.getzs.com

http://bcbsurvivalusa.com/index.html BCB Survival USA - cool little knives, saws, etc.!
