The Squirt I have was a single bevel. I used a diamond Lanky to make it a regular bevel and it sharpens up fine.

If you think you've got the knife sharp, but it doesn't act that way, strop the edge on a piece of clean brass rod and then a piece of leather. You may have a microscopic wire edge that needs to be worked off...
