This is precisely the question many of us are exploring. Without big enough of a sample, however, it's really hard to draw any significant conclusions. First, we need to put together a well-rounded collection of high-end knives. Then we go out and play with ^H^H^H^H^H^H^H^H^H test them. I'm hoping to get a grant.
