For discussion sake...
How many people concentrate on gear which can be used right or left handed and how difficult would it be to use these things weak handed if strong arm is injured?
And what are these tools?

I'm in No Place to Comment on How Handedness Relates to Tools and Etc, here.

But I Do Know that it is Possible to Write with your "Non-Hand". I Stumbled Across it by Accident once!

It Involves Holding the Pen or Pencil in a Real Contorted Finger Arrangement. I Forget the Details on Just How, -on Just How I Did it. But I Came Across it, -and with such, -you can Write as Naturally and Easily with your Non-Hand, -as you can with your Normal, Natural, Writing Hand!

We All Know How Difficult or Impossible it is!, -to Try Writing with your Non-Hand, when Holding the Pen, Etc, in the *Normal* Way you Do with your Normal Writing Hand. At least for Anyone who's ever Bothered to Check Such Out.

But it can Still be Done! In Another Way though. In Another Finger Arrangement! You "So" Can Write Perfectly Naturally with your Non-Writing Hand! You Need such a Different Finger Arrangement, which Makes For the Neccessary Compensations. It just so Happens to be such a Good Contortion. At Least for me. And Probably for Anyone.

Point is, -It *Can* be Done! Quite Naturally! And that this is the Way! And that Way is that you Need to Find your New Finger Contortions and Arrangement.

This can be Useful in Fields like Physical Rehabilitation and Therapy Etc.,-Not exactly my Personal Forte. But it's Applicable Usefulness there should Still Hold and Stand.

Imagine that Someone Injures or Loses their Writing Arm / Hand. One might Think that they are Thereby Barred from Writing. NOT So! They "Can" Learn to Compensate and Write with their Other, Non-Writing, Hand! It just Takes a Different Finger Arrangement of a Way! One's just Got to Find That!

This is thereby Not Limited to Only the Injured or Disabled, Etc. Anyone can Learn and Do This! Injured or Otherwise, -This Ability can Come In Useful to you, Someday!

Beyond Writing, You can so Manipulate Other Objects with your Non-Hand, -as you Do Naturally with your Normal Handedness. (Again via a *Different* Finger Arrangement) That Too can Sometime Come In Very Crucial and Useful!

This here can have some Useful Applicability, as to What you Ask in your Question. Many Tools and Objects can be Manipulated Perfectly Normally, Easily, and Naturally, -as would be the case with your Normal Hand! If but this somewhat Different Finger Arrangement / Adjustment, -is Arrived At!

My only tool for right handed use is the scissors. They are really hard to use with the left hand. Even my custom made knives are designed for use with either hand.
Using tools with your weak hand depends on the amount of practice you have and how dominant your strong side is. Iīm almost ambidextrous. When I have to use tools with my weak hand, it usually takes only a short time to switch. People who lack pratice or have a very dominant side often can hardly use any tool with their weak hand because of that.
Iīve handled knives that were designed for right handed use. The were useable with the left hand but it felt very unconfortable and it meant to sacrifice some power and precision.

Well, it wasn't until a couple of years ago that I started to think about gear and handed-ness. I am a lefty by birth, but was scolded early in childhood about writing with my left hand ("only stupid children write with their left" my teacher tried to tell me) and started at an early age to use both. I play sports right handed, but do most everything else left. I would have to say that my dexterity with the right is about 80% of the left, and I can write with the right hand at about 60% of the left. Of course, being a lefty that isn't saying much since we lefties are notorious for having bad handwriting. Anyway, back to the subject, I have found that most items are ambidexterous. With the exception of some scissors and golf clubs. When I bought my CRK Sebenza, I thought seriously about getting a left hand model since I usually handle the knife with the left, but decided it wasn't that big of a deal, and I got a great price on my right handed version.

the only tool i can think of that matters l/r hand is my gun...well, no, actually, I've shot left handed, so no it's not an issue.
