We are putting up another 30 pints of Corned Beef Hash. Thank you St. Patrick; corned beef is on sale finally. Also putting up 40 pints of ground beef. That'll have us well over 300 pints of canned meat products (chicken, ground beef, beef stew, chili, corned beef hash, and beef franks). I still have 30 lbs of pork butt to turn into sausage, as well as 40 lbs of ham to do something with, all still in the freezer.
6 months from now I hope to be doing this with moose meat, caribou, and salmon. It is easy enough paying for the meat, but I need to go get my own. Sure wish I could find a cheap and easy way to move my cattle up from Texas. But that ain't gonna happen.
I've been seriously considering putting up some pickled eggs again. Sometimes a pickled egg and a shot of gin at midnight is just the sort of tonic these old bones need.
I also worked up a decent recipe for my 45 reloads. Went to the range on Thursday to test it out and it is a winner. Will have to stuff up a hundred or so more.

Sounds like you prep like my grand parents did. good for you. I'd like to have a decent supply like that on hand. >45 acp or Colt loads? You might find an independent tucker who could help you, or depending on how many head you have, someone in that area with a tuck and a cattle trailer headed your way.

45 acp. It is a long haul from central Texas to Anchorage Alaska. Might be a real challenge to find someone going from there to here. With the way feeder cattle market has been going, I would probably do better to send them to market. I've got enough put up right now I can make do until Moose season opens.
I need to get my flour mill back from my youngest. She's got no use for it and I am tired of buying flour. I found a reasonable source for wheat up here, and it would be much better to do my own milling.
We got about 15" of snow today. Actually, it started coming down last night, and by Noon today it was over. Sure is nice having a sturdy snow-thrower to pitch it out of the way.

Then again, my city is named Dublin. (Where's the four leaf clover icon when you need one?) Just put our Corned Beef, Cabbage, Potatoes, Carrots and Onions in the crock pot about an hour ago. Probably will have some Kraut on the side, too. In just 10 short hours from now we'll be having a hearty lunch.

Benjamin,what is your recipe for pickled eggs?Do you use cider vinegar or white vinegar?I would love to pickle my own.Haven't found any good store bought ones.....

Ben I have an old vitamix, does a fantastic job of milling wheat or any other grains. Got it for five bucks at a yard sale. Yeah, might be better to sell them and buy more there. My favorite ,45 target load in .45 acp is a 230 grain cast semi wadcutter over five grains of unique or three point five grains of bullseye. Not a real blaster but does very well on paper targets and would seem to be a decent home defense load.

Big Ben’s Pickled Eggs
Tasty and great bar food. Never last long enough to go bad.
3 cups cider vinegar 2 ½ cups water ½ cup sugar ½ cup packed brown sugar 1 ½ tsp pickling salt 3 bay leaves 4 peppercorns 12 cloves 2 sticks cinnamon A dozen ripe eggs
Prepare eggs by hard boiling. Cool completely. Combine all other ingredients in a medium saucepan and bring to a boil. Reduce heat and simmer for 10 minutes or so.
Find a glass container that will hold all the eggs and liquid. Peel the eggs. Place in the jar. Strain the liquid into the jar. Seal and refrigerate at least a week. Keep in refrigerator and they should hold at least a month, though they will likely be gone before then.

I've become enamoured with Ramshot powder for the past couple years. I used 6.5 grains of Zip behind a 200 grain plated hollow point. I like Tac for my 556 target loads.

What do you mean by "ripe" eggs? Haven't used that line of powders myself. I'll look into some of the charges and ballistics on it. Jacketed and plated bullets are cost prohibitive for target practice, for us anyway. I buy cast bullets locally, Used to cast my own, but we each shoot about 200 rounds on average when we hit the range, and with the cost of components these days.
