When I had to work in my car, I just propped my organizer up on the steering wheel and turned on the dome light. If yoy want a really versitle work surface, attach a pair of coat hooks to the back of a clipboard and hook it over the steering wheel. I see UPS trucks with hard mounted clipboards on the steering wheel
