bacpacboy and I went for an overnighter at our local Provincial Park this week an tried some I think is worthy of sharing.
I'm a terrible baker at home so I've never tried campfire baking before, but gave it a shot this weekend. I made chocolate chip muffins (the Betty Crocker just add water kind) in an oven improvised out of a cook pot, lid, computer fan, a few rocks and a tuna can. It worked beautifully.
I put a few rocks in the bottom of my cook pot, with a cut down computer fan grate on it, so that the muffin cup would be elevated inside the pot, and then used a tuna can under the pot so it would be elevated above the coals.

I wasn't sure about the timing so just kept checking it. I think it took about 20 minutes or so, but I didn't pay enough attention to my watch to be sure. YMMV depending on how hot your fire is. It made a perfect evening snack for me, and turned out so well that I made a second one for bacpacboy to have for breakfast.
