I'm not a very exciting cook when I'm backpacking so the limited ability to simmer isn't a concern for me. Pouring boiling water into a dehydrated pouch of food or making some instant coffee is about as complicated as I like to get in the backcountry. LNT and keeping weight down are more important to me than the menu.
I'm definitely picking up the inferno attachment. That's one of the stoves significant features IMO.
I was happy to see you using the MSR kettle. I love mine and I'm honestly surprised that I don't see more of them in use when I'm out.
