Funny, I just noticed that Doug's new Mk2 Perseverance has a grind angle of 40 degrees inclusive, while Doug's other knives all have grind angles of 30 degrees inclusive.
Might the thinking be that the S30V steel holds an edge well enough that we can get by with a thinner edge, while the 1095 steel needs a slightly thicker grind to hold its edge?
OR might is be that the thinking is that users will be a bit more abusive on the blade, and thus it needs a thicker blade?
Just wondering what your thoughts are on that?
