If I were going into truly harsh, cold conditions, I'd probably take an XGK, but if it's cold and I need to do real cooking (where I need a good simmering stove), the Xtreme is a good one, and as you said, it is a really easy stove to use.

Interestingly, Colin Fletcher spoke highly of the Xtreme in his Complete Walker IV.

I'll probably get my man card temporarily revoked for saying this but I haven't read the Complete Walker. eek That needs to go on my near term reading list.

You hit the nail on the head on stove selection. My old Snowpeak Gigapower usually gets selected for warm/light trips and the Whisperlight or XGK get the nod when it's going to be cold.
