I'll second the Randall shop in Orlando. My wife knows that the next time we go (when the kids are older), MY real destination is Randall! Their web site is
http://www.randallknives.com/ . They're expensive, but worth it, IMO. Their leather sheaths are made by Sullivans Leather, which also has a shop in Orlando.
As suggested, check the telephone directory. In addition to the BassPro shop (really is worth a visit--for the whole family--my kids like the local one), look for Army/Navy or military surplus stores, gun stores, knife shops, backpacking or camping shops/outfitters, etc. I always search for these type shops when travelling, and have fun finding them, plus occasionally come up with some goodies!
Don't forget WalMart, a giant discount department store chain. They have darn near everything, and quality ranges from sublime to ridiculous. You pays your money, and you takes your choices.
