The USDA Canning Guide (1994) http://foodsafety.psu.edu/canningguide.html

It is also in book form, but the guidelines have changed, so if you run across a print version, be sure it is 1994 or later.

If you use any other canning guide (there are many) and the info conflicts with the canning guide above, go with the USDA 1994+ version for safety.

Just a small note.

If canning, consider what you are canning and the smell.

The first time my dad bottled peppers, the entire house stunk for a week. After that he relegated that particular operation to the BBQ outside.
