That my friends is North Carolina PORK BBQ and by appearance it is "Lexington Style" ,which is some of the finest PORK BBQ known to man. It is traditionally cooked over a bed of Hickory coals very slowly. Done correctly, the process takes 12-16 hours and produces a savory tender meat, served chopped or sliced with sides of slaw, baked beans, and hush puppies.
