Some gun blue kits will work(depending on the knife blade) they are fairly cheap. I use the Hopps brand to re blacken my ka-bar blades, and to touch up my guns when needed. I don't think it will work with some types of SS.

Maybe just have it bead blasted, it would still be a silver color, but not very shiny...
