I generaly make small batches (except jerky there hugeand I become everyones best friend) and rotate them. Most of my packets get used within a few months but I have used mine up to two years old. The drier they are to begin with and the better they are packed the longer they last. Oh and one more little consideration, the dehydrator and vacuum packer are cheaper for a family than buying prepackaged foods for one trip.
