This was a BIG hit the other night, so much so, I figured it needed a post.
1 pint prepared rhubarb (stewed and sweetened)
1 box strawberry cake mix
1 can Big Red Soda
Grease a square casserole pan or 10" dutch oven.
Preheat oven to 350 degrees.
Combine Rhubarb with 1/2 cup water. Pour rhubarb into bottom of pan. Dump and evenly spread cake mix over top of rhubarb (do not mix in). Sprinkle Big Red soda over cake mix to coat (do not mix in). Bake for 1 hour. Remove and let cool for 10 minutes. Top with generous dollup of whipped cream or small scoop of vanilla ice cream.
You can add a handful of sliced strawberries to the rhubarb if you like. Mine was so sweet I didn't need any. It was still quite tart, but the richness balanced it well enough for me.
Alternatively, you could just prepare the rhubarb in the same pan you make the cake in, just dice up fresh rhubarb, add a 1/2 cup water and a half cup or more of sugar, cook it down till it breaks up and then make the dump cake as above over the hot stewed rhubarb.
