I see the Mora 511 knife on sale pretty cheap sometimes. Would the steel be one that would throw off sparks if struck against flint, chert, or quartzite? I know some old pockets knives of carbon steel will. And old files.

You post prompted me to grab one of my elderly laminated steel Moras and try sparking on handy ferro rod. I got a spark.
You were asking about flint and other rocks. I was once working with pickaxes in flinty limestone and we were striking so many sparks with our tools that we were concerned about starting a fire in the abundant dry grass.
I would much prefer a ferro rod to an odd piece of flint - much more abundant spark shower.
