National Knife Day?

Apparently it was the National Knife Day on August 24, just two days ago. I'm not sure who comes up with this sort of stuff, but I won't think too hard about it, since I like knives. Why don't we have a show/tell about your favorite knives?

My favorite knife is a Japanese santoku kitchen knife. (Sorry, no picture handy, so I can do only the tell part.) It's plain and it isn't some expensive designer knife. But don't let that deceive you. It holds an edge really well, even after decades of use. I find it a true pleasure to cook with this knife. It's small and light, and so sharp that cutting up veggies is effortless. The knife almost feels like an extension of your hand. Sometimes I cook just to use that knife more!

Knives are tools, you select the appropriate tool for the job at hand.

I am a fan of Moras and Leatherman tools. I like the light My Fire version, with the included fire steel (dandy for canister stoves) and the LM Skeletool.

My favorite kitchen knife is a Japanese Nubatama 'Ryuto' (basically a gyuto) that set me back $800. 'Black Steel' very sharp and only about 4oz despite a blade length of 240mm.

My first real pocket knife, as in not pot metal, purchased on my 18th birthday. It was a V-nox Tinker with a silver Star of David over blue scales It lasted two years before going for a walkie (pickpocketed probably) on it's own.

I don't have a favorite knife ATM. The closest is a pair of Klein 2100-9 electricians scissors. Like my first knife, it's my first pair of scissors not made from pot metal.
