Interesting video, didn’t know there was a difference in sharpening for kitchen and woods knives. Some very good info on sharpening technique with low cost ideas for equipment.
He does make a pitch for his sponsor at the end. I hadn’t watched all the way through before posting, don’t know if that violates any forum rules.

I kind of sharpen the same for woods and kitchen knives. But I do adjust the angle a bit depending on the steel. For instance my high end Japanese kitchen knives do fine at around 20 degrees inclusive while 1095 and the like won't do very well that steep.

I’ve been doing all my knives at about 22 degrees (so I think) except for a mora knife. What angle would you use for a regular carbon steel knife?

FourDog is actually an American company based in Minnesota - Don Kevilus and Mors have been friends for years. Don often comes up to Canada to Frostbite events and the Winter Camping Symposium.
